I have been looking for a good alternative to regular pasta and this one is it. The noodles do get soft but not too mushy. I def. reccomend this for the gluten free diet.

Timing is everything

You have to be careful not to vercook OR undercook this one. It is a great substitute for us GF eaters, but you really have to stand at the stove and test every now and then to check for consistency. There are "energy saver" cooking instructions on the package which suggest more of a "soaking" than a boiling, and I've found that this works a little better for getting that "al dente" texture you're used to.
