Gluten-Free Gingerbread Cookies

1 3/4 cups GF flour mix (plus more for rolling cookies)
1/2 tsp baking soda
1 1/2 tsp xanthan gum
1/2 tsp ginger powder
1 tsp cinnamon
1/8 tsp ground cloves
1/8 tsp sea salt
1/2 cup butter
1/2 cup coconut sugar
1 egg
1/2 cup molasses

Combine flour, baking soda, xanthan gum, spices, and salt; mix well. Cut the butter into the flour mixture until mixture forms pea-size crumbs. In a separate bowl beat the sugar, egg, and molasses together. Add to the flour mixture and mix until combined. Form the dough into a log shape, wrap in wax paper and refrigerate for one hour. Roll dough out on lightly floured surface using more GF flour mixture to 1/4 inch thickness and cut into desired shapes. Transfer to a cookie sheet and bake at 350 degrees for 12 minutes. Cool on a wire rack before decorating.
