4 salmon fillets 4 tbsp. olive oil, coconut oil or butter Sea salt and pepper 1 cup plain yogurt 1/2 cup parsley, finely chopped Juice of one lemon 3/4 cup raw walnuts, chopped To make yogurt sauce: combine yogurt, parsley, lemon juice and a pinch of salt. Mix well and set aside. Lightly sprinkle salt and pepper on both sides of each piece of salmon. Over medium heat, heat ½ the oil in a skillet and add two salmon fillets, skin side up. Saute for 2-3 minutes, flip salmon and sauté for another 2-3 minutes or until center of salmon flakes. Remove first two fillets and keep warm. Add the rest of the oil and repeat with remaining two fillets. To serve, place one salmon fillet on each plate, top each with ¼ cup of the yogurt sauce and several walnut pieces.
