Serves 1
Heat coconut oil over medium heat in a small skillet; add frozen spinach pancake and saute, about 4 minutes each side. Meanwhile, melt butter over medium heat in a second small skillet and crack the egg into the pan. Season with sea salt and pepper. Cook the egg sunny-side up, about 4 minutes. Move the spinach pancake to a plate and top with the fried egg. Serve immediately with a generous side of salsa.
