I have used this product for couple of years. It sweetens like common table sugar, with a slight cooling effect in the mouth. It has half the calories of table sugar. It is slowly metabolized, so my children do not get the sugar highs/lows from it. I'm not kidding, when they get a piece of junk candy, my wife and I have to peel them off of ceiling. With this product, they can sprinkle a teaspoon on top of sour strawberries and have no adverse behavioral actions. There is no aftertaste like one usually gets with Stevia. You can cook with it too. However, from experience I have learned the properties of this product do not allow for good caramelizing. Cakes work great. Cookies not bad. Candy and syrups not really. Lastly, this product is not capable of fermentation; therefore, it will not promote tooth decay, because oral bacteria will not be able to convert it to acids.

What is it?

In looking for natural sweetners, it helps to know what is in the product. So I had to research to find what this is. From The Ultimate Life website: "Derived from birch bark, THE ULTIMATE SWEETENER® is 100% pure birch sugar (also known as Xylitol). No birch trees are ever cut down for the extraction of the Xylis (the chemical name for the sweetener in the birch bark)."
