Dylan Shively, C.C.

Dylan has owned and operated D-RASS DELI and La Cuisine of Evergreen Catering for the past two years. The time he has spent there is unlike any culinary experience and it is truly an honor to serve the mountain community. With the support of local people, Dylan has made his dream into a thriving reality. He trained in the field of culinary arts as an apprentice working under top chefs at the prestigious Brown Palace Hotel in Denver. It is to this wonderful place that he attributes many of my talents, working in various departments such as the Ship Tavern, Palace Arms, Ellington's, Room Service, Garde Mager and Pastry. The diversity of the establishment provided Dylan with a well-rounded set of skills.  All of the work and dedication proved worthy when Dylan finally had the opportunity to work toward his own personal goals as a chef. There is no better line of work than that which you create for yourself.
