Karen Taylor is a Licensed Acupuncturist and Herbalist with over 23 years of clinical experience specializing in diet and nutrition from an Asian medical perspective. As Founder of The Breakfast Cure, Karen's passion is to share the benefits of congee with as many people as possible. Congee is a traditional Asian rice porridge that has been used for centuries to heal a wide variety of digestive complaints such as constipation, stomach pain, cramping, poor digestion and absorption etc. Karen used this ancient healing recipe to create congee flavors that agree with the Western pallet and address the common health complaints of her patients.When her mother died from complications of a completely preventable digestive condition, Karen experienced a strong motivation, a calling if you will, to share the healing benefits of congee with the world.Karen has a private acupuncture practice in Eugene. Today she is excited to share both how to make congee and why it's so healing for digestion.
