Rachel Wolpo

As a little girl, Rachel watched the women in her family prepare meals and celebratory feasts; she followed her passion for Pastries and made the decision to excel as a Pastry Chef.  Rachel received her Associates Degree in International Baking & Pastry Arts and her Bachelor’s Degree in Food Service Management from the accredited University, Johnson & Wales.  Working eight years with Denver’s top caterer, Le Petit Gourmet, provided her with years of experience.    Other opportunities led her to large-scale production at exclusive five-star, five-diamond resorts along with smaller family owned and operated establishments.  She has worked closely with top Pastry Chefs such as: James Mullaney of SeaIsland Resorts, Kaushik Chowdhury of the Marriott Desert Ridge and Food Network’s, Keegan Gerhard.  Chef Rachel has also had the pleasure of cooking with Wolfgang Puck and Sherry Yard, his Pastry Chef at the time, and for the President of the United States in 2008.   During this time, Rachel learned that her own body could not properly digest gluten or cow’s milk. A chronic autoimmune disease had taken control of her life.  Studying the science behind flour structure, she began properly replacing traditional flours with gluten-free whole grains and starches creating gluten-dairy free cakes and pastries.  Chef Rachel has worked with a team of Certified Herbalists of both Eastern and Western medicine, as well as faculty of the International Academy of Natural Cookery, in Boulder, Co., whose concentration was on vegan cooking.   Rachel has conducted many Hands-On and demonstrational classes on pastry/cooking.  Organic plant-based food is extremely important along with knowing the healing properties the earth provides for us.  As Hippocrates said, “Let food be thy medicine and medicine be thy food.” Not only is it important to understand, ‘we are what we eat’ our food and lifestyle choices are deeply rooted to our health and well-being, empowering individuals to gain control of their overall health by discovering new nutritional dense foods daily.
