I taught elementary school for 20+ years, then had a second career in the business world. I am now retired and living in an incredible wilderness area of southwest Montana. I started exploring vegetarianism many years ago. I have slowly become a semi-vegetarian. I still eat turkey and ham on holidays.  I think eating a mostly plant based diet can be easier if cooking classes are a part of the process. You learn several easy, delicious, nutritious recipes to get you started. Also, you will be learning about the benefits of a plant based diet to provide encouragement, support, and the desire to eat healthier. My cooking classes will be teaching you how you can eat vegetarian around the world. Our Theme will be, "My Carrot Has a Passport" First we will follow Mr Carrot to Italy. He will help us make a delicious Tomato  Tart with a Basil-garlic crust. And what could be more Italian than Summer spaghetti with raw arugula and tomatoes? How about polenta risotto with garlicky greens? To cap the meal off, we will be making Classic Almond Biscotti, and Italian Roast Coffee.
