Making Sausage

This class will explore the methods for making sausage in the Middle Ages and the adaptations that we have made with the development of modern equipment. We will discuss a few different medieval recipes and then make two different types of sausage, a beef / pork and a chicken. The sausage will be prepared at the class time, but will not be ready for consumption. They will still need to be smoked before eating.
