Apple Spice and Maple Sparkling Shrub

Seasonal spices combine with the subtle flavor of apple to warm you through, with just a touch of vinegar tang.
6 drinks
3⁄4 cup Natural Grocers apple cider vinegar
1 medium apple, grated
1 1-inch knob fresh ginger, grated
1 cinnamon stick
2 cloves
2 cardamom pods
4 tablespoons Natural Grocers Brand Organic Maple Syrup
24 ounces sparkling water, or up to 32-ounces
6 apple slices, for garnish (optional)
2 slices of lemon, for garnich (optional)

1. In a glass bowl or jar combine the apple cider vinegar, apple, and ginger. Using a mortar and pestle or the back of a large knife, crush the cinnamon stick, cardamom pod, and cloves until broken up but not ground. Add the crushed spices to the apple mixture and stir well.

2. Cover and refrigerate at least 24 hours or up to 7 days.

3. Strain the mixture through a fine mesh strainer or several layers of cheesecloth into a clean glass jar, pressing or squeezing gently to extract as much of the liquid as possible. Discard the solids. Store in the refrigerator in a sealed glass container until ready to use.

4. Combine 1½-2 tablespoons of the apple vinegar mixture and 2 teaspoons of maple syrup in a champagne flute. Top with sparkling water and gently stir. Garnish with an apple slice that has been rubbed with lemon juice to prevent browning. Serve immediately.
