Broccoli, Bacon, Cheddar Salad

1 large head of broccoli
6 slices bacon
1 cup cheddar cheese
1⁄2 small red onion , chopped
1⁄2 red pepper, chopped
1 cup organic mayonnaise
3 tablespoons red wine vinegar
1 tablespoon sugar, omit if on a sugar-free diet

Remove any leaves from the broccoli stem and trim the tough end off. Cut the head into bite-sized florets; peel the stem and chop it into bite-sized pieces. Move the broccoli to a large serving bowl. Add the bacon, cheese, onion, and pepper to the bowl and stir to combine. In a separate small bowl, add the remaining ingredients. Whisk until well combined and add to the broccoli mixture. Toss to combine. This dish can be prepared ahead of time and left to chill in the refrigerator.
