  • 1 1/2 tbsp(s) extra virgin olive oil
  • 12 button mushrooms, sliced
  • 1 large onion, diced
  • 1 medium zucchini, diced
  • 1 medium green bell pepper, diced
  • 1 tbsp(s) chili powder
  • 1 tsp(s) cumin seeds, crushed
  • 1 pinch(s) red pepper flakes
  • 1 pound(s) grass fed beef, ground
  • 1/2 cup(s) cheddar cheese, shredded

In a large skillet, heat oil over medium flame. Add mushrooms, onion, zucchini, bell pepper, chili powder, cumin, and red pepper flakes. Cook, stirring often, until the onion is tender and the mushrooms have released their juices (about 5 minutes). In a separate pan, brown the meat. When finished, add the meat to the vegetables and stir to combine. Sprinkle cheese over the top of the mixture, cover pan, and remove from heat. Let stand until the cheese has melted, 2 to 3 minutes. Gently slide spatula under mixture to loosen from pan. Serve hot.
