  • 1 head Romaine lettuce, chopped, about 5-6 cups
  • 6 slice(s) bacon
  • 3 hard-boiled eggs, quartered
  • 2 ripe tomatoes, diced
  • 1 ripe avocado, diced
  • 1 cup(s) cooked and cubed chicken
  • 1/2 cup(s) crumbled goal cheese, (or blue cheese if desired)
  • 2 tsp(s) Dijon mustard
  • 3 tbsp(s) mayonnaise
  • pinch(s) sugar
  • to-taste sea salt and pepper
  • 1 tbsp(s) white wine vinegar

Place the lettuce on a large serving platter or in a large bowl. Arrange the bacon, eggs, tomato, avocado, chicken and goat cheese in rows on top of the lettuce. Serve with the creamy dressing.

Simple Creamy Dressing:

Whisk together the mustard, mayonnaise, sugar, salt and pepper until combined. Add the vinegar and whisk until smooth. Set aside until ready to serve.
