  • 1 large eggplant
  • 2 tbsp(s) Olive oil
  • 1 1/2 cup(s) marinara sauce
  • 1 cup(s) shredded mozzarella cheese
  • toppings of your chioce, sliced olives, mushrooms, peppers, onions, crumbled bacon or sausage, etc.

Directions

Preheat oven to 350°. Slice eggplant into 3/4” rounds. Place the slices on a parchment-lined baking sheet and lightly brush them with olive oil. Bake for about 25 minutes, or until eggplant slices have just begun to soften. Remove from the oven. Top each slice with 2-3 tablespoons of marinara, sprinkle with your prepared toppings, and finish off with a large pinch of cheese. Place under a broiler until cheese begins to bubble and brown. Serve hot.
