  • 20 ounce(s) cod, (2 packages frozen)
  • 2 tbsp(s) butter
  • 1 half(s) medium lemon, sliced
  • 12 corn tortillas
  • 1 medium onion, chopped
  • 3 roma tomatoes, chopped
  • 1/2 bunch(s) cilantro, minced
  • 1 medium avocado, chopped
  • 1 medium jalapeno pepper, deseeded and chopped, optional
  • 1 medium organic lime, juiced
  • to-taste sea salt
  • 8 ounce(s) chedder cheese, shredded

Directions

Wrap fish, butter, and lemon in foil and bake at 350 degrees for 10 minutes or until done. Drop temperature to 250 degrees and warm tortillas in oven.

Combine all chopped vegetables in a bowl. Add a dash of salt and lime juice and mix together for fresh salsa.

Build your fish tacos and top with cheddar cheese.
