Grapefruit Ginger Switchel Mocktail

This mocktail uses the mild flavor of coconut vinegar along with the spice of ginger and the sweetness of grapefruit for a unique twist on tradition.

1⁄4 cup thinly sliced fresh ginger, (about 1 ounce/30 grams)
2 cups filtered water
4 tablespoons coconut vinegar
2 tablespoons Natural Grocers Raw Unfiltered Clover Honey
1 pound ripe pink grapefruit, juiced
1 cup chilled sparkling water, or as desired

1. Combine ginger and water in a small saucepan and bring to a boil over high heat. Remove from heat, cover and let steep for 20 minutes.

2. Pour the ginger and water into a clean jar. Add the vinegar and honey, and stir until the honey is completely dissolved. Cover and refrigerate until cool, at least 1 hour.

3. To serve, combine ½ cup strained ginger vinegar mix with ¼ cup grapefruit juice and ¼ cup sparkling water. Add ice if desired and enjoy!
