In a shallow pan, bring 1 inch of water almost to a boil, without boiling. Pour 1-2 teaspoons of vinegar in the water to help the egg whites congeal. Crack each egg individually into a small cup, then gently drop egg into water. Add all eggs, then cover, turn off heat and let eggs sit for 4 minutes or until egg whites are cooked. While eggs are cooking, place julienned onions in a dry sauté pan on medium heat, stirring occasionally until they begin to caramelize. Add coconut oil and olive oil. Add cubed or sliced ham and simmer for 5 minutes, stirring once. Tear greens into medium sized pieces and add to pan. Stir to mix. Cover and cook 1-2 minutes. Season with sea salt, pepper, and optional red pepper flakes or mustard seed. Top with poached eggs.
