Cut bacon into 2-inch pieces with kitchen shears and place in bottom of crock pot. Rub the entire roast with olive oil, then rub with salt and pepper. Cut 10 slits all over the roast with kitchen shears and insert garlic cloves in the slits. Place the roast (fat side up) on the bacon. Mix the last 3 ingredients in a bowl to make a sauce. Pour sauce over roast. Cook on high 1-2 hours, then turn to low and cook 6-8 hours. Shred beef and stir back into liquid, then serve.
