Mix the first five ingredients together for the marinade in a small bowl. Place prepared vegetables in a large bowl and pour in the marinade; stir well to coat the veggies. Marinate in the refrigerator for at least 1 hour, up to 4 hours.
Soak 8-10 wooden skewers (depending on how big the veggies are) in water for 10-15 minutes while the vegetables marinade. When ready to cook, remove vegetables from marinade and thread onto skewers. Leave a little space between the vegetables for air to circulate. Place skewers on grill and grill until all vegetables are golden and tender, 20 to 25 minutes.
