Simple Radish and Radish Greens Salad

Enjoy the crunchy, peppery goodness of radishes in this simple salad that utilizes the whole vegetable (no waste here!). It’s the perfect accompaniment to any grilled meat!

  • 1 bunch(s) radishes, (choose smaller radishes with perky, bright green leaves)
  • 2 tbsp(s) lemon juice, (from one small-medium lemon)
  • 2 tbsp(s) extra virgin olive oil
  • 2 tsp(s) Natural Grocers raw honey
  • 1 tsp(s) Dijon mustard
  • salt and pepper, to taste

  1. Tear the radish leaves from their stems and wash to remove any grit (this may take two washes). Dry thoroughly. This step is easily accomplished with a salad spinner; otherwise, use a clean kitchen towel.
  2. Meanwhile, trim the stems from the radishes. Discard the stems and wash the radishes.
  3. Holding the root end, thinly slice each radish, discarding the roots. Transfer radishes to a serving bowl.
  4. Thinly slice the radish greens and add them to the bowl with the sliced radishes.
  5. Combine the remaining ingredients in a jar with a tight-fitting lid and shake well until the dressing is emulsified.
  6. Drizzle the dressing over the radish and radish greens, mix well, and serve immediately.

NOTE: If you are unable to find radishes with nice greens, you can substitute 1 cup of thinly sliced romaine hearts for the radish greens.
