  • 3 tbsp(s) lemon juice
  • 3 tbsp(s) extra-virgin olive oil
  • 1 tsp(s) Dijon mustard
  • 1 tsp(s) Natural Grocers raw honey
  • 1/4 tsp(s) sea salt
  • 2 tbsp(s) nutritional yeast
  • 1 bunch(s) kale, stems removed, leaves finely chopped
  • 1 (16-ounce) package strawberries
  • 1/4 cup(s) Natural Grocers dried apricots
  • 1/4 cup(s) Natural Grocers slivered almonds
  • 1/4 cup(s) shredded Parmesan cheese, (optional)

  1. Make the dressing by whisking together the lemon juice, olive oil, Dijon mustard, honey, salt, and nutritional yeast in a large salad bowl.
  2. Add the kale and toss with the dressing to coat all leaves well; set aside while preparing the remaining ingredients.
  3. Evenly spread the almond slivers in a skillet over medium-low heat. Stir every few minutes until lightly toasted, 3-5 minutes total, watching closely to avoid burning. Once toasted, transfer to a small bowl and set aside to cool.
  4. Thinly slice the strawberries, discarding the green stems, and chop the dried apricots. Add them to the kale and toss.
  5. Scatter the almond slivers and cheese on top of the kale and serve.
