  • 1 orange bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, diced
  • 1 small cucumber, cut into 4 spears and chopped
  • 1 small zucchini squash, cut into 4 spears and chopped
  • 1 pint(s) cherry tomatoes, halved
  • 0 crumbled feta cheese, for serving
  • 1 gluten-free pasta of your choice, package

Directions

Bring a large pot of salted water to boil. Cook pasta until it is al dente.

While pasta cooks, combine remaining salad ingredients (except for cheese) in a large bowl. When pasta is ready, drain, add to bowl of vegetables, and toss to combine. Pour over vinaigrette (see additional instructions below for a suggested recipe). Toss until salad ingredients are well coated. Serve topped with the feta crumbles.
