Grilled Thai Curry Beef Kebabs

These flavorful meat kebabs make a great meal served with rice, fresh herbs, and veggies or a fun appetizer served with the sauce for dipping. Either way, they are sure to please.

8 kebabs
8 bamboo skewers
2 tablespoons organic lime juice
3 tablespoons Thai green or red curry paste, divided
2 1⁄2 teaspoons Natural Grocers® Brand Bulk Organic Coconut Sugar, divided
1 pound ground organic grass-fed beef
1⁄2 cup Natural Grocers Brand Organic Original Coconut Milk
1 tablespoon Natural Grocers Brand Bulk Organic Peanut Butter
Optional for serving
  rice
  chopped organic basil and cilantro
  sliced crisp organic vegetables (like cucumber, red pepper, carrots, jicama, napa cabbage)
  Natural Grocers Brand Bulk Roasted Salted Virginia Peanuts, crushed or roughly chopped

1. Soak skewers in water for at least 20 minutes.

2. Preheat grill to medium-high (~400° F).

3. Combine the lime juice, 2 tablespoons of curry paste, and 2 teaspoons of coconut sugar and mix well. Add the beef and mix until fully incorporated.

4. Divide the beef into eight portions and use your hands to shape one portion around each soaked skewer to form a hot dog shape. Place prepared kebabs on a plate.

5. Mix the coconut milk and peanut butter with the remaining 1 tablespoon of curry paste and ½ teaspoon of coconut sugar in a small grill-safe saucepan.

6. Prepare your optional ingredients for serving.

7. Place the kebabs and the saucepan on the grill. Cover and cook, turning the skewers every 2-3 minutes, until they are evenly browned on the outside and cooked through, 6-8 minutes total.

8. Remove the kebabs from the grill. Carefully remove the hot saucepan from the grill and transfer the sauce into a serving dish or dipping bowls. Serve kebabs immediately with optional ingredients and the sauce drizzled over everything or for dipping the kebabs into.
