Organic Olive Oil Dressings and Marinades

Think making your own dressing is hard, or time consuming? Think again! These simple dressing recipes are quick and easy and are built on a base of organic extra virgin olive oil, which is heart healthy, loaded with free-radical scavengers, and is a welcome reprieve from the processed oils found in many store-bought dressings. These dressings are great for salads, but they can also be used to reinvigorate steamed vegetables, baked or grilled fish or chicken, grains, beans, and as a marinade for chicken, fish, veggies, tofu, or tempeh. Each recipe makes about ½ cup, but since they keep well in the refrigerator, you may want to double or even triple the recipes to always have a healthy, good4u dressing on hand.
