Honey Almond Coffee Cake

This almond flour coffee cake is the perfect balance of honey, vanilla, and almond. It is super moist and fluffy, with just enough sweetness, and pairs perfectly with a hot cup of coffee or tea. A delicious little treat!

For the cake
2 1⁄4 cups Natural Grocers® Brand Bulk Almond Flour
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt
3⁄4 teaspoon baking soda
6 Natural Grocers Brand Regenerative Organic Certified® Pasture-Raised Eggs
3⁄4 cup Natural Grocers Brand Raw and Unfiltered Clover Honey
1⁄2 teaspoon organic almond extract
3⁄4 teaspoon organic vanilla extract
For the topping
1⁄2 cup Natural Grocers Brand Bulk Sliced Almonds
2 tablespoons Natural Grocers Brand Raw and Unfiltered Clover Honey
2 tablespoons Natural Grocers Brand Bulk Almond Flour
1⁄4 teaspoon Natural Grocers Brand Bulk Organic Ground Cinnamon
1 tablespoon organic butter
Pinch of salt
  1. Preheat the oven to 350°F and generously butter a bread/loaf pan. Cut a piece of parchment paper to line the bottom.
  2. Mix the almond flour, salt, and baking soda in a small bowl and set aside.
  3. Whisk the eggs, honey, vanilla extract, and almond extract together in a large bowl. Add the dry ingredients and mix to remove any clumps, being careful not to over mix (this can cause the batter to sink in the middle as it bakes).
  4. Use a spatula to transfer the batter into the prepared pan.
  5. Bake until a knife inserted in the center comes out clean, about 4 minutes.
  6. While the cake is baking, prepare the topping. Add all topping ingredients to a pan and cook on medium-high for about 3 minutes. Add the topping to the cake the last five minutes of baking time.
  7. Remove the cake from the oven and let it cool completely before serving. Serve with a drizzle of honey if desired. Store leftovers in an airtight container for up to two days or in the refrigerator for up to four days.
