Pumpkin Spice Apple Pie Rice Paper Rolls

An easy and healthy dessert that will satisfy your fall pumpkin spice cravings. These apple pastries have a golden crunchy exterior contrasted with a warm brown butter, spiced apple interior that tastes like fall in every bite!

1 1⁄2 tablespoons organic butter
2 medium organic apples of choice, cored and diced into ½-inch cubes (about 2 cups)
2 1⁄2 Natural Grocers® Brand Bulk Organic Coconut Sugar, divided
1 tablespoon Natural Grocers Brand Bulk Organic Pumpkin Pie Spice Blend
A pinch of Natural Grocers Brand Bulk Real Salt
3 Natural Grocers Brand Regenerative Organic Certified® Pasture-Raised Eggs
1⁄2 cup organic milk
2 tablespoons organic vanilla extract
24 organic small rice spring roll wrappers
Optional toppings: organic whipped cream, organic vanilla ice cream, or Natural Grocers Brand Organic Vanilla Yogurt; organic powdered sugar
  1. Preheat oven to 350° F. Line a baking sheet with parchment paper.
  2. Melt butter in a medium skillet over medium-high heat until it becomes aromatic and starts to bubble and brown slightly. Add apples, 2 tablespoons coconut sugar, pumpkin spice blend, and a pinch of salt. Mix well and remove from the heat.
  3.  In a wide, shallow bowl, such as a pie pan, whisk together the eggs, milk, and vanilla extract.
  4. Dip a spring roll wrapper in the milk and egg mixture, one at a time, for 30 seconds each. To prevent tearing and for a crispier exterior, lay down three softened rice paper sheets on a clean surface, slightly overlapping. Place two generous spoonfuls of filling in the center, fold in the sides, and tightly roll. Place on the baking sheet and complete this step for the remaining rolls.
  5. Sprinkle the tops of the rolls with the remaining ½ tablespoon coconut sugar and bake for 20 minutes, or until crispy and slightly browned. 
  6. Serve warm with optional toppings.
