Serve as an appetizer at your next holiday party or get-together. They will disappear faster than you can put them out!

Approximately 20 Sweet Potato Bites
2-3 medium organic sweet potatoes (~1.5-2 pounds)
2 tablespoons Natural Grocers® Brand Organic Extra Virgin Olive Oil
Natural Grocers Brand Bulk Real Salt and Organic Ground Black Pepper
1⁄2 cup Natural Grocers Brand Bulk Organic Pecan Pieces
7-8 ounces organic brie cheese
1⁄2 cup organic cranberry sauce
Fresh organic rosemary or thyme, optional for garnish
  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into ¼-inch rounds. Place the sweet potato rounds in a mixing bowl, drizzle the olive oil over the potatoes, lightly season with salt and pepper and toss to coat. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  3. Roast the sweet potato rounds for 15-20 minutes, flipping them halfway through. They should be tender with slightly crisp edges.
  4. While the sweet potatoes are roasting, place a skillet on the stovetop over medium heat, add the pecan pieces and lightly toast, stirring every 30 seconds to prevent burning. Once aromatic and lightly browned, transfer to a small bowl and set aside. Slice the brie into small pieces, just a little bit smaller than the size of your sweet potato rounds.
  5. Once the sweet potatoes are out of the oven, place a piece of brie on each round. Return the baking sheet to the oven for approximately 3 minutes, just until the brie melts.
  6. Remove the sweet potato rounds from the oven and let them cool for a minute. Spoon a small dollop of cranberry sauce onto each round, add a few pieces of toasted pecan, and sprinkle fresh rosemary or thyme leaves on top for an extra burst of flavor and visual appeal.
  7. Arrange the rounds on a serving platter and enjoy warm.
