Traditional Irish Mashed Potatoes with Sausage

This is our take on colcannon, a traditional Irish dish of mashed potatoes blended with kale or cabbage and lots of butter and cream, often served on St. Patrick’s Day. Our version includes kale, leeks, and green onions and is served with a side of sausage for a satisfying and filling meal!

4 medium organic russet potatoes, peeled and cut into 1-inch pieces
1 tablespoon Natural Grocers® Brand Bulk Real Salt, plus more for seasoning to taste
5 tablespoons unsalted organic butter, plus additional for serving
1 bunch organic kale, tough stems removed and leaves finely chopped (about 2 cups)
2 medium organic leeks
4 organic green onions, thinly sliced
1 cup organic heavy cream
1 package of 4-6 organic sausages of your choice

  1. Add the potatoes to a large pot and cover with cold water by about one inch. Add 1 tablespoon of salt and bring to a boil. Boil until the potatoes are fork-tender, about 20 minutes.
  2. While the potatoes are boiling, cook the sausage per the package instructions and prepare the leeks: Cut off the dark green tops (these are great to save in the freezer for a future stock), trim off the root ends, and remove any tough outer layers. Thinly slice the leek into rounds. Place the rounds in a bowl and cover with cold water to rinse away any dirt. Once the dirt has settled, scoop the rounds out and place on a dish towel and pat dry.
  3. Drain the potatoes in a colander and set aside. Return the pot to the stove. Melt the butter over medium heat and add the kale and leeks. Cook the greens for about 5 minutes, or until they are wilted and soft. Add the green onions and cook for one minute more.
  4. Pour in the cream, mix well, and add the potatoes. Reduce the heat to low and mash the potatoes while incorporating them with the greens. Season with extra salt and pepper if desired.
  5. Serve warm topped with a pat of butter and a sausage on the side.
