Easy Breezy Cran-Orange Bundt Cake

1 package Natural Grocers Brand Gluten-Free Vanilla Cake Mix (set aside 1 tbsp for dusting)
3⁄4 cup organic unsalted butter, softened
1⁄2 cup organic milk (regular or dairy free)
1 tablespoon organic orange zest (from 1 large organic orange, plus zest from a 2nd orange for topping)
1⁄2 cup organic orange juice (pressed from 1 large organic orange)
3 Natural Grocers Brand Organic Pasture-Raised Eggs
1 teaspoon organic vanilla extract
1 cup Natural Grocers Brand Organic Frozen Cranberries (do not thaw)
Easy Orange Glaze
1 cup organic powdered sugar
2–3 tablespoons organic orange juice
  1. Preheat oven to 350°F. Generously grease the bottom and sides of a bundt pan with butter or oil.
  2. Reserve one tablespoon of cake mix. Beat remaining cake mix and butter in a large bowl with an electric hand mixer or stand mixer with paddle attachment until coarse crumbs form. Add the milk, orange juice, orange zest, eggs, and vanilla, and beat until smooth.
  3. In a separate bowl, toss frozen cranberries with 1 tablespoon cake mix. Fold dusted cranberries into batter.
  4. Pour batter into bundt pan.
  5. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Once cake is baked, remove from oven and allow to cool in the pan 10-15 minutes. Then release from pan by gently running a thin spatula or knife around the edges and center tube to loosen. Place a wire rack over the pan, invert, and let the cake drop out carefully. Let cool completely.
  7. Once the cake has fully cooled, in a small bowl, whisk 2–3 tablespoons of orange juice into the powdered sugar to reach your desired glaze consistency. Drizzle over the cake and top with orange zest, if desired. Serve immediately or cover and serve within 2 days. After 2 days, store covered in the refrigerator.
