Green Olive Lamb Burgers Recipe
The addition of anchovy in this recipe makes it an “umami” burger. Umami is one of the five basic tastes (together with sweet, sour, bitter, and salty), and is often described as “savory.” With the combination of ingredients in this recipe you won’t taste the anchovy by itself; instead you will taste a deliciously heightened savory flavor… a taste that will keep you coming back for more!
- Dice the olives to a fine tapenade-like texture.
- Finely dice the anchovies.
- In a mixing bowl, use your hands to combine the olives, anchovies, garlic, and lamb until well combined.
- Form the lamb mixture into four patties. Cook on a preheated grill or skillet about 4-5 minutes per side for medium. An instant-read thermometer inserted into the center should read 165º F for medium and 160º F for medium-rare.
