1 cup Natural Grocers Brand Organic Canned Pumpkin
1⁄4 cup Natural Grocers Brand Organic Extra Virgin Coconut Oil, melted + more for greasing pan
1⁄4 cup Natural Grocers Brand Organic Grade A Dark Maple Syrup
1⁄2 cup Natural Grocers Brand Bulk Organic Coconut Sugar
2-3 teaspoons Natural Grocers Brand Bulk Organic Pumpkin Pie Spice Blend (use higher amount for extra spice)
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Cinnamon
1⁄8 teaspoon Natural Grocers Brand Bulk Real Salt
1 1⁄4 cups Natural Grocers Brand Bulk Organic Oat Flour
1⁄4 cup Natural Grocers Brand Bulk Almond Flour
2 teaspoons Natural Grocers Brand Bulk Baking Powder

  1. Preheat oven to 350° F and generously grease a bread pan with coconut oil.
  2. Whisk the eggs in a large bowl. Add the canned pumpkin, melted coconut oil, and maple syrup and mix until smooth. Add the coconut sugar and spices and mix again. Add the oat flour, almond flour, and baking powder and mix until well combined and no lumps remain.
  3. Pour the batter into the prepared bread pan.
  4. Bake for 55-60 minutes if using a glass or ceramic pan or 35-40 minutes if using a metal pan. The top should be lightly browned and a toothpick inserted into the center of the loaf should come out clean.
  5. Transfer to a cooling rack and allow the bread to cool completely (about 2 hours) before running a knife around the edge of the loaf and gently turning it out of the pan to slice.
  6. Store leftover bread in an airtight container for up to two days, or in the refrigerator for up to five days.
