Smoked Salmon Salad

This beautiful salad combines Natural Grocers® wild-caught smoked salmon, silky avocado, and a bright Dijon honey vinaigrette for a dish that is as nourishing as it is delicious. Wild-caught salmon is an excellent source of the healthy omega-3 fats and protein, supporting overall wellness and satiety. Perfect for a festive dinner party or an easy, satisfying weeknight meal.

For the vinaigrette
2 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil
2 tablespoons organic lemon juice
1 1⁄2 teaspoons Natural Grocers Brand Organic Dijon Mustard
1 1⁄2 teaspoons Natural Grocers Brand Raw and Unfiltered Clover Honey
4 tablespoons minced organic red onion
1 1⁄2 teaspoons Natural Grocers Brand Bulk Organic Dill
Natural Grocers Brand Bulk Real Salt and Organic Ground Black Pepper, to taste
For the salad
1 (5-ounce) package organic mixed salad greens
1⁄2 of an organic English cucumber, sliced into thin rounds or quarters
2 organic green onions, thinly sliced
1 small organic avocado, cubed or thinly sliced
1⁄2 of an organic red, yellow, or orange bell pepper, chopped
1 (3-ounce) package Natural Grocers Brand Wild Smoked Coho or Sockeye Salmon
1⁄4 cup crumbled organic goat cheese
chopped fresh organic dill, optional
  1. Make the vinaigrette: Add all ingredients to a jar with a tight-fitting lid and shake until emulsified.
  2. Add the mixed greens, cucumber, green onions, avocado, and bell pepper to a large bowl and drizzle desired amount of vinaigrette over the top. Gently toss to incorporate the dressing.
  3. Top with chunks of smoked salmon, crumbled goat cheese, and optional dill. Serve immediately.

Triple Berry Gluten-Free French Toast Bake

This Triple Berry Gluten-Free French Toast Bake is your go-to dish for a stress-free and delicious Sunday brunch. With no dipping, flipping, or frying required, you can prepare it the night before and pop it in the oven the next morning—effortless and indulgent! Bursting with the vibrant flavors of three berries, this fluffy French toast bake is sure to delight your guests and have everyone coming back for seconds… or even thirds.

1 tablespoon organic butter for greasing the casserole dish
1 loaf gluten-free bread (~6 cups bread cut into cubes or torn into chunks)
8 Natural Grocers® Brand Regenerative Organic Certified® Pasture-Raised Eggs
2 1⁄2 cups organic whole milk or dairy-free milk alternative
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt
2 tablespoons organic vanilla extract
1 1⁄2 cups organic mixed berries or Natural Grocers Brand Organic Frozen Mixed Berries
1 cup Natural Grocers Brand Organic Triple Berry Preserves
Optional for serving
Organic butter, fresh organic berries, Natural Grocers Brand Organic Grade A Dark Maple Syrup, or a light dusting of organic powdered sugar
  1. Preheat the oven to 350°F. Grease a 9 x13-inch casserole dish. Lay the pieces of torn or cubed bread on a baking sheet, and toast in the preheated oven for 10 minutes to partially dry the bread. Take the toasted pieces of bread and evenly distribute them in the casserole dish.
  2. In a large bowl, whisk together the eggs, milk, salt, and vanilla. Pour evenly over the bread. Gently press the bread into the egg mixture, sprinkle the berries over the top, cover, and refrigerate overnight to let the bread soak up the egg mixture.
  3. In the morning, remove the French toast from the fridge and preheat the oven to 350°F. Bake the French toast for about 35 minutes, until the egg mixture is almost set. After the French toast has baked for 30 minutes, heat the Triple Berry Preserves in a small saucepan over low heat until it is warm but not bubbling. Take the French toast out of the oven and spread the preserves evenly over the top, place back in the oven, and bake for 10 minutes more. Once done, cut into pieces and serve immediately with optional toppings if desired.
