Easy Sheet Pan Mediterranean Chicken

Our Easy Sheet Pan Mediterranean Chicken is simple to make, yet bursting with flavor! Succulent chicken thighs and seasoned potatoes meld perfectly with the flavors of garlic, onion, balsamic vinegar, Dijon mustard, and Greek olives, then it’s all topped with feta cheese crumbles for a creamy, tangy finish. Add a green salad and you have a Natural Grocers® Regenivore Meal Wheel feast!

2 pounds organic potatoes (any variety), peeled and chopped into 2-inch pieces
4 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil, divided
1 1⁄2 pounds boneless skinless chicken thighs, each thigh cut in half
3 tablespoons Natural Grocers Brand Organic Balsamic Vinegar
2 tablespoons Natural Grocers Brand Organic Dijon Mustard
2 teaspoons Natural Grocers Brand Bulk Organic Oregano
1 tablespoon Natural Grocers Brand Bulk Organic Smoked Paprika (or regular paprika)
1 teaspoon Natural Grocers Brand Bulk Real Salt, divided
1 teaspoon Natural Grocers Brand Bulk Organic Ground Black Pepper, divided
1 small organic yellow onion, chopped into ½-inch pieces
5 organic garlic cloves, diced
3⁄4 Natural Grocers Brand Organic Pitted Greek Kalamata Olives
3 tablespoons organic butter, cut into small cubes
2 tablespoons organic lemon juice
1⁄2 cup crumbled organic feta cheese
chopped organic parsley, optional for garnish
Optional ingredients: organic grape tomatoes, sliced organic bell pepper (red, orange, yellow or green), slices of organic lemon
  1. Preheat the oven to 425°F. 
  2. In a large bowl, toss the potatoes with 2 tablespoons olive oil. Season with ½ teaspoon each salt and pepper and roast on a sheet pan for 15 minutes, or until just tender. 
  3. While the potatoes are roasting, in the same bowl, toss together 2 tablespoons of olive oil, the chicken, balsamic vinegar, Dijon, oregano, paprika, garlic, onion, and remaining salt and pepper. 
  4. Remove the potatoes from the oven and nestle the chicken mixture around the potatoes. Add the olives around the chicken and potatoes and scatter the pieces of butter over the chicken. Add any of the optional ingredients, and return the pan to the oven for 20 minutes. Remove from the oven, drizzle the lemon juice over the chicken and sprinkle the feta over the top; return to the oven for an additional 5-7 minutes, until the feta is beginning to melt. You may also place the pan under the broiler for a minute or two to melt the feta more, if desired. Remove from the oven and add the optional parsley for garnish before serving. Serve with green salad or vegetables.

Garlic Butter

Garlic butter elevates anything it touches! Try it on steamed or roasted veggies; fish, chicken, or steak; and, of course, bread! It’s a snap to make and can easily be doubled or personalized by swapping the parsley for other finely chopped herbs, such as basil, rosemary, or thyme.

1 stick organic unsalted butter, at room temperature
2-3 organic garlic cloves, very finely minced or grated
2 tablespoons finely minced organic parsley
1⁄2 teaspoon Natural Grocers® Brand Bulk Real Salt
Optional ingredients: 1-2 tablespoons finely minced organics herbs, such as rosemary or thyme
  1. Add all ingredients to a medium bowl and thoroughly mix until everything is evenly incorporated.
  2. Use immediately or scrape the butter into the middle of a piece of parchment paper. Fold one half of the parchment paper over the butter and use it to shape the butter into a cylinder. Twist the ends (like a candy wrapper) and transfer to the fridge to firm up. When ready to use slice off what you need. Store garlic butter in the refrigerator for up to a week or in the freezer for a few months.
