Steamed Asparagus With Lemon Vinaigrette Recipe

1 bunch Asparagus, approximately 1 pound, washed and ends trimmed
2 tablespoons olive oil, extra Virgin
2 teaspoons Lemon Juice, fresh-squeezed
1 teaspoon Dijon Mustard
1 teaspoon White Wine Vinegar
1⁄2 Shallot, minced
1⁄4 teaspoon Thyme Leaves
  sea salt, to taste
  1. Steam asparagus over high heat until bright green and tender-crisp, about 3 minutes.
  2. While asparagus is steaming, whisk together the oil, lemon juice, mustard, vinegar, shallot, and thyme. Season with sea salt to taste.
  3. Place asparagus on a platter, drizzle with vinaigrette, and serve.
