Natural Grocers Chocolate Covered Bacon Recipe

If you have never tried chocolate covered bacon, you might be pleasantly surprised by how well rich dark chocolate complements the savory and salty flavors of bacon—it is the perfect sweet meets salty duo!

1 (12-ounce) package Natural Grocers Brand Bacon
2 (3.5-ounce) bars Natural Grocers Brand Organic Dark Chocolate with Sea Salt, (72%)
Flaked sea salt, optional
  1. Preheat oven at 350° F.
  2. Cover a baking sheet with parchment paper. Lay each strip of bacon on the sheet, side-by-side, without overlap. Place in the oven and bake for approximately 20 minutes, or until crispy. Transfer bacon to a paper towel-covered plate and let the bacon cool. Drain the bacon grease and discard the parchment paper.
  3. While the bacon cooks, break the chocolate into squares, place on a cutting board and loosely chop into pieces (approximately four pieces per square). Place the chocolate in a medium-size heatproof bowl.
  4. Add a few inches water to a saucepan and place over medium-high heat. About 5 minutes before the bacon is done, place the bowl of chocolate on top of the pan and gently stir the chocolate until it has melted. Remove from the heat and set aside.   
  5. Cover the baking sheet with parchment paper, hold a strip of bacon at the top, carefully (without bending the bacon) dip most of it into the melted chocolate. If you have trouble dipping the bacon, spoon the melted chocolate over the bacon until both sides are covered to your liking.
  6. Lay the chocolate-dipped bacon on the parchment paper-covered baking sheet. Repeat until all of the bacon is covered with chocolate. Optional: While the chocolate is still wet, lightly sprinkle the top with flaked sea salt.
  7. Refrigerate the baking sheet to set the chocolate for about 15 minutes. Once set, let the bacon come to room temperature and it’s ready to eat.
  8. Enjoy right away, or store in an airtight container in the refrigerator for up to 3 days.
