Vegan Burger with Caramelized Onion

When you’re hungry for a plant-based burger with some oomph, this caramelized onion burger is just the thing to satisfy your cravings.

4 Beyond Meat Burgers, or your favorite plant-based burger
  Natural Grocers Brand Real Salt and Organic Ground Black Pepper to taste
Caramelized Onion
1 tablespoon Natural Grocers Brand Plant Based Buttery Stick
1 large organic yellow onion
1 tablespoon Natural Grocers Brand Bulk Organic Coconut Sugar
1 tablespoon organic balsamic vinegar
2 organic garlic cloves, minced
1 teaspoon Natural Grocers Brand Bulk Thyme Leaf
Plant-Based Herbed Butter Sauce
3 tablespoons Natural Grocers Brand Plant Based Buttery Stick, melted
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Garlic Granules
1⁄4 teaspoon Natural Grocers Brand Bulk Organic Oregano Leaf
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Dried Basil
1 tablespoon Natural Grocers Brand Bulk Organic Red Chili Flakes
  Natural Grocers Brand Bulk Real Salt, to taste
Build your burger
4 hamburger buns or 4 large organic lettuce leaves
2 organic avocados, cut in half and into slices

  Vegan cheese

  chopped fresh organic parsley, thyme, or oregano leaves for garnish
  1. Preheat the oven to 350° F.
  2. Cut the onion into even slices to preferred thickness. Melt the plant-based butter in a thick-bottomed cast iron or stainless-steel pan over medium heat. Spread the sliced onion evenly in the pan, and cook for approximately 10 minutes to soften, stirring every 3-4 minutes to ensure even cooking. Add a pinch of salt and the sugar, then reduce the heat to low and continue to cook for about 30 minutes until they are deep amber in color and caramelized. Stir often enough to prevent burning but not so much to interfere with caramelization.
  3. Finish the onion with the balsamic vinegar, garlic, and thyme; stir and cook an additional 3 minutes. Set aside.
  4. For the Herb Butter Sauce: In a small bowl, combine the melted plant-based butter with the seasonings and stir until well incorporated.
  5. Place the burger buns (cut in half) on a baking sheet, brush the herb butter sauce on the inside of each bun (both halves) and bake in the oven for 8-10 minutes.   
  6. For the burgers: Preheat a grill or pan to high heat. Once hot, brush with coconut oil (or oil of your choice) and cook the burgers 4 minutes (or follow package instructions). Flip and cook an additional 4 minutes. If you are using vegan cheese, add as soon as the burgers are flipped and cover for the last minute or two of cooking to allow the cheese to melt.
  7. Place burgers on the buns, top with caramelized onion, four slices of avocado, and garnish with fresh parsley. Serve immediately.
