Karen's Coconut Fudge Recipe

For the fudge
6 tablespoons Natural Grocers Brand Organic Extra Virgin Coconut Oil, softened
1 cup Natural Grocers Brand Bulk Fresh Ground Almond Butter, room temperature
1⁄4 cup Natural Grocers Brand Organic Maple Syrup
1 tablespoon Natural Grocers Brand Bulk Organic Cinnamon
3 tablespoons Natural Grocers Brand Bulk Cocoa Powder
1⁄2 cup Natural Grocers Brand Bulk Organic Fine Shredded Coconut, unsweetened
1⁄4 teaspoon Natural Grocers® Brand Bulk Real Salt
For the Cranberry Nut Fudge
1⁄4 cup Natural Grocers Brand Bulk Organic Roasted and Salted Cashews, chopped
1⁄4 cup Natural Grocers Brand Bulk Non-GMO Walnut Pieces
1⁄4 cup Natural Grocers Brand Bulk Organic Fruit Juice or Sugar Sweetened Cranberries
For the Raspberry Coconut Fudge
3⁄4 cup Karen’s Naturals Just Organic Raspberries
1⁄8 cup Natural Grocers Brand Bulk Organic Fine Shredded Coconut
  1. Grease an 8 x 8-inch Pyrex baking dish with approximately 1 tablespoon coconut oil and press parchment paper into the baking dish, making sure it sticks to the coconut oil, covering the bottom and sides of the dish. Set aside.
  2. In a medium bowl, stir together the coconut oil and almond butter until well combined. Add the remaining fudge ingredients and stir until incorporated.
  3. Add your choice of flavor profile ingredients and stir until well incorporated. Set aside an extra couple of tablespoons of each ingredient for garnishing the fudge, sprinkle evenly on top.
  4. Spread the fudge into the lined Pyrex dish and garnish with the extra flavor profile ingredients, pressing them gently into the top of the fudge. 
  5. Refrigerate until solid, about two hours, up to overnight.
  6. Cut into squares and enjoy immediately. Store the remaining fudge in an airtight container in the refrigerator.
