These delicious, allergy friendly, vegan, paleo cookies have a surprise hiding inside—they’re green! Sunflower seeds have a high amount of the free radical scavenger chlorogenic acid, which turns green when it meets baking soda during baking. The effect is completely harmless and makes for perfect St. Patrick’s Day cookies, with no food dye or hidden spinach. The cookies need to cool for about an hour to turn green, so resist the urge to eat them all hot out of the oven!

It’s an understatement to say that our co-founder, Margaret Isely, loved the holidays. I mean she really loved the holidays and all the prepping, cooking, and feasting with friends and family. She was known for all her homemade specialties—lots of delicious veggie dishes (we hope we’ve done her proud), homemade wine, homemade applesauce and, most notably, her homemade cranberry sauce. This simple, yet signature, recipe was something the Isely family looked forward to holiday after Thanksgiving holiday.
