Creamy Beet and Feta Dip

Beets and feta are a match made in heaven, and when you whip them into a creamy dip, they are a treat for the eyes and the taste buds! Serve with fresh, crisp organic vegetables for healthy dipping in the most enjoyable way.

~3 cups
3⁄4 cup crumbled organic feta cheese
1 organic garlic clove, finely minced
2 tablespoons Natural Grocers® Brand Organic Whole Milk Plain Yogurt
1 tablespoon Natural Grocers Brand Organic Extra Virgin Olive Oil
Zest and juice of a small organic lemon (~2 tablespoons juice and 2 ½ teaspoons zest)
1⁄4 teaspoon Natural Grocers Brand Bulk Real Salt
1⁄2 (8.8-ounce) package of organic cooked beets (or two 1 1/2-inch diameter cooked organic beets)
Optional for topping
1⁄2 small organic cooked beet (leftover from package), diced
2-4 tablespoons chopped Natural Grocers Brand Bulk Shelled Roasted Salted Pistachios
2-4 tablespoons chopped organic parsley, basil, dill, and/or thyme
Natural Grocers Brand Bulk Organic Red Chili Flakes, to taste
Drizzle of Natural Grocers Brand Organic Extra Virgin Olive Oil
Fresh ground Natural Grocers Brand Bulk Organic Black Pepper, to taste
  1. Combine the feta, garlic, yogurt, olive oil, lemon juice, lemon zest, and salt in the bowl of a food processor and process, stopping to scrape down the sides occasionally, until the feta is smooth.
  2. Roughly chop the beets and add them to the bowl of the food processor and continue processing, scraping the sides as necessary, until the mixture is smooth.
  3. Top with desired toppings and serve, or cover and refrigerate for up to 24 hours, adding toppings just before serving.
