1⁄2 cup Natural Grocers® Brand Bulk Sliced Almonds
1 tablespoon Natural Grocers Brand Organic Extra Virgin Olive Oil
1 tablespoon organic butter
1 (12-ounce) bag frozen organic riced cauliflower
1 medium organic garlic clove, minced
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt
1⁄4 teaspoon Natural Grocers Brand Bulk Ground Organic Black Pepper
2 medium organic green onions, ends trimmed and green and white parts thinly sliced
1⁄2 cup chopped organic parsley
1 tablespoon organic lemon juice
  1. Heat a large skillet over medium heat. Add the almonds to the skillet and stir them around the pan until they are fragrant and lightly toasted, 3-5 minutes. Keep a close eye on the nuts to prevent burning. Transfer the toasted almonds to a bowl and set aside.
  2. Return the skillet to the heat and add the olive oil and butter. When the butter is melted and bubbling, stir to combine the olive oil and butter. Add the riced cauliflower and garlic and cook, stirring every minute or so. After 5 minutes of cooking, season with salt and pepper and add the green onion. Stir to combine and cook for an additional 4 minutes, stirring as needed to ensure even cooking.
  3. Remove the skillet from the heat and stir in the parsley, lemon juice, and toasted almonds. Taste and adjust with additional salt, pepper, or lemon juice if desired. Serve immediately.
