Pumpkin and Bean Chili Recipe

1 tablespoon Natural Grocers® Brand Organic Extra Virgin Unrefined Coconut Oil
1 cup diced organic yellow onion
5 organic garlic cloves, minced
2 (15-ounce) cans Natural Grocers Brand Black Beans or beans of choice, drained and rinsed
1 (15-ounce) can Natural Grocers Brand Organic Fire Roasted Tomatoes
1 teaspoon Natural Grocers Brand Bulk Organic Chili Powder
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Cumin Seed
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt, or to taste
1 cup vegetable stock or water
1⁄2 cup canned Natural Grocers Brand Organic Pumpkin
2 tablespoons freshly squeezed organic lime juice
2 tablespoons minced organic cilantro

1. Add the coconut oil to a medium pot set over medium-high heat. When the coconut oil has melted and is hot, add the onion and cook for 3 minutes, stirring occasionally. Add the garlic and cook for another 2-3 minutes, stirring frequently. Reduce heat to medium.

2. Add the beans, fire roasted tomatoes, chili powder, cumin, and salt; cook for 15 minutes, stirring occasionally.

3. Add the stock or water, pumpkin, and lime juice and stir to combine. Cook for 5 minutes.

4. Just before serving, add the cilantro and stir well. Serve immediately.
