1. Add the coconut oil to a medium pot set over medium-high heat. When the coconut oil has melted and is hot, add the onion and cook for 3 minutes, stirring occasionally. Add the garlic and cook for another 2-3 minutes, stirring frequently. Reduce heat to medium.
2. Add the beans, fire roasted tomatoes, chili powder, cumin, and salt; cook for 15 minutes, stirring occasionally.
3. Add the stock or water, pumpkin, and lime juice and stir to combine. Cook for 5 minutes.
4. Just before serving, add the cilantro and stir well. Serve immediately.
