Vegan Banana Pudding

Rich, creamy banana pudding, but make it healthy! This easy banana pudding is egg free, vegan, and Paleo-friendly but lacks nothing in taste. Topped with a scattering of fresh organic banana slices and a sprinkle of pecans, this is a decadent, no-guilt treat you will love.
2 cans Natural Grocers® Brand Organic Original Coconut Milk
3 ripe organic bananas (not mushy)
3 1⁄2 tablespoons arrowroot starch/flour
1 teaspoon organic vanilla extract
1⁄4 teaspoon Natural Grocers Brand Bulk Real Salt
1 tablespoon Natural Grocers Brand Organic Grade A Dark Maple Syrup
  organic banana slices
  fresh organic berries
  Natural Grocers Brand Bulk Organic Pecan Pieces
  drizzle of maple syrup
  sprinkle of Natural Grocers Brand Bulk Organic Cinnamon or Nutmeg
  whipped coconut cream

1. Place all ingredients in a blender and blend until smooth.

2. Transfer to a saucepan and place on the stovetop over medium-high heat. Watch carefully, whisking every 30 seconds or so. As soon as it starts to bubble, remove from the heat (continued heat will cause the arrowroot to lose its thickening ability). Transfer to individual serving dishes (glasses or ramekins) and refrigerate for three hours; the pudding will thicken as it cools.

3. Serve with your choice of toppings.
