This brothy soup is loaded to the brim with flavor, with the perfect amount of spice from ginger, garlic, red pepper, and green onion, a subtle tartness from the mirin, and a nice balance of earthy flavor from sautéed mushrooms and carrots, and toasted sesame oil. It is a hearty soup with a bounty of slurping noodles, vegetables, and protein simmered in a piping hot delicious and nutritious broth. Warning, this might just be one of the healthiest and tastiest noodle soups you’ve ever tried and every ingredient provides support for a healthy body and healthy immune system too.
These Thai-style lettuce wraps are delicious and bursting with flavor—a perfect combination of sweet, salty, tangy, spicy, and crunchy. Often made with ground pork or chicken, lean, nutrient-dense yak meat or 100% grass-fed beef, makes a wonderful substitute in this dish. (Yak and grass-fed beef have a similar flavor profile.) This recipe works great for a weeknight family dinner or a weekend meal when entertaining guests.
This weeknight-friendly dish takes advantage of the Korean chili sauce gochujang, a sweet and spicy sauce that livens up anything it touches. If you like it extra spicy, go for the full amount of sriracha. The roasted bok choy is just tender, with some of the leaves remaining a little crunchy, for an addictive veggie side.
I made this recipe entirely from produce and products I found at Natural Grocers! In case you didn’t know, right now watermelon, carrots, celery, cucumber, garlic, radishes and fresh herbs are all in season! That means its time to load up on any and all produce to make huge fruit and veggie salads! Then all you need is a little dressing to go on top. This time around, I created a Thai-style dressing to go on top, since I’ve been craving Asian flavors lately!
