We’ve shaken things up for lunches with this fun recipe. Using protein-packed quinoa, this vegan friendly salad is jazzed up with a citrusy dressing and plenty of texture. Don’t have mason jars on hand? No problem! Just skip the assembly instructions and mix everything in your favorite large salad bowl.
While traditionally made with basil, pesto can be made with any leafy green! To infuse a bit of Spanish flair, we’ve replaced the basil with earthy chard and subbed raw pumpkin seeds for pine nuts. This makes for a darker and creamer pesto that balances out the spicy zip of chorizo in this fast and easy pasta salad.
I made this recipe entirely from produce and products I found at Natural Grocers! In case you didn’t know, right now watermelon, carrots, celery, cucumber, garlic, radishes and fresh herbs are all in season! That means its time to load up on any and all produce to make huge fruit and veggie salads! Then all you need is a little dressing to go on top. This time around, I created a Thai-style dressing to go on top, since I’ve been craving Asian flavors lately!
