In a large bowl, combine ground lamb with all the ingredients until mixed evenly. Divide the meat mixture into 6 or 8 sections. Roll each by hand into thick tubes, then flatten until relatively thin. In a skillet over medium-high heat, cook patties on both sides until cooked through. Suggested toppings: salad greens, tomatoes, sundried tomatoes, cucumbers, pitted olives, goat cheese and tzatziki sauce.
