  • 1 coconut milk, can
  • 1 1/2 tsp(s) salt, divided between rice and chicken
  • 2 cup(s) water
  • 1 1/2 cup(s) uncooked jasmine rice
  • 1 tsp(s) lime zest
  • 3 tbsp(s) fresh lime juice, divided between rice and chicken
  • cilantro or thai basil, optional
  • 1 pound(s) Boneless Chicken Breasts
  • 1/2 tsp(s) red pepper flakes
  • 1 tbsp(s) Olive oil

Coconut-Lime Rice:
Bring coconut milk, 1 tablespoon of salt, and two cups of water to a boil in a saucepan over medium heat. Stir in rice, cover, and reduce heat to low. Simmer 20-25 minutes, or until liquid is absorbed and rice is tender. Stir in lime zest and 1/2 of the lime juice. Garnish with cilantro or basil.


Island Chicken:
Marinate chicken breast in lime juice and red pepper flakes. Heat olive oil in a pan. Cook chicken breasts on one side for 10 minutes. Flip and cook through. Dice chicken breast and season with salt to taste. Add to Coconut-lime rice and enjoy!
