Gluten is a protein commonly found in wheat, rye, and barley and anything made from these grains.  In baked goods, gluten helps to bind the ingredients together; in fact, the word gluten comes from the Latin word for glue.  In people who have gluten intolerance or celiac disease, the body is unable to properly digest this protein and it travels throughout the digestive tract causing problems.  When incompletely digested, gluten activates the immune system and leads to inflammation and immune dysfunction throughout the entire body.  If this incompletely digested protein makes its way into the bloodstream, it can even trigger neurological symptoms due to its opioid-like effects.

Skeptics claim the rise in gluten intolerance is due to improved testing methods and not an actual increase in the number of people with this debilitating digestive disease.  However, a study using frozen blood samples taken from military personnel 50 years ago has clearly shown that intolerance to gluten is about 400% more common today than it was 50 years ago.
