  • 2 avocados, peeled and diced
  • 1 pint(s) cherry tomatoes, or grape tomatoes
  • 1 1/2 tbsp(s) extra-virgin olive oil
  • 1 tbsp(s) balsamic vinegar
  • salt and pepper, to taste

Directions

Place the cucumber, avocado and tomatoes in a serving bowl. Drizzle oil and vinegar over the salad; gently mix and season with salt and pepper.
