  • 6 romaine lettuce leaves
  • 1/2 avocado
  • 1 tsp(s) extra virgin olive oil
  • 1/2 tsp(s) curry powder
  • 1/2 lime
  • 5-ounce can of chicken in water, drained
  • 2 celery stalks, finely chopped
  • 1/2 apple, finely chopped
  • 1/4 cup(s) cashews, finely chopped
  • 2 scallions, thinly sliced
  • to-taste sea salt and pepper

Wash and pat dry 6 Romaine lettuce leaves. Set aside.
In a medium bowl, mash together the avocado, olive oil, curry powder and the juice squeezed from 1/2 a lime. Add the chicken, celery, apple, cashews, scallions and stir to combine. Season with sea salt and pepper to taste.
Spoon into lettuce leaves and enjoy!
